Now what ?

Thanks TUBS - I have the icecap fans for the hood I'm just not sure how to mount screws from the casing on the lamp to the acrylic hood. The shop where I bought the light says that I can use acylic blocks that I would glue in place then drill for the hangers.

You could hang them, Depending on how tall your canopy is. I have the same lighting (2x250watt pfo pendants) in my oak canopy. If you use the eye bolts that came with the pendants(I'm guessing you have the pfo pendants) you should open them up and move the wiring. I pinched a wire on both pendants with the eye bolts that came with them. Each time I fired up a pendant I would trip the GFCI.....

My HQI pendent is mounted directly to the canopy via 5/8" spacers ... the spacers are there primarily to allow the wiring to go behind the reflector for the VHO lamps I have. Works very well. And love the HQI lighting coloration (and the effect on the corals I am seeing) compared to the Iwasaki.

Just received my 250 10k HQI lamp from PFO and now need to find out how to mount inside my new acrylic canopy? The thing that I'm unsure of is what should I use as a spacer and how far away should I be from the acrylic.

To be on the safe side I would use spacers and definately fans to keep it the acrylic as cool as possible. My main concern is warping of the acrylic due to the heat. I'm not saying that it would warp it but having spacers is a simple matter and you'll likely need a fan(s) anyway.
