It may be fishless, but its not the physical appearance of Ich that you need to worry about at this point, but the eggs that are going to hatch and try to find a host. If they find no host, then you are Ich free.
could the newly hatched ich use a dead fish as a host?
Dead fish do not help or aid the parasite to go through its life stages. If the fish was infected when it died, the parasites in the fish may be mature enough (near enough to the next stage) to move on to a life stage outside of the fish, but they will not use the dead fish after that.
Dead fish do not serve as hosts for this parasite.
