are water changes really important? would it really make a diff if you just did a 2gal water change every month or two?

Yes they are very important. It should be a part of everyones maintenance routine to perform a 10 - 15% water change at least every 2 months but every couple or 3 weeks would be better. So 10 - 15% in your case is 3 - 4.5 gallons; I suggested 5 to make a good round number.
